Cupcookies

Not cupcakes, not cookies, yes you read that right, cupcookies.

So the story goes like this.  One day I was sitting in one of my favorite classes ever when in sashays Will (one of my classmates) with his adorable fluffy dog, Ogden on a leash in one hand and a box of baked goods in a container in his other hand.  Sitting down and arranging himself he brought out the box and passed them around.

“Cupcookie anyone?” he asked.
“What?” we all replied.
“Cupcookie” he said simply before passing the box.

And indeed the delicious baked goods he passed around were unarguably cupcookies. Delicious chocolate chip cookies in the form of cupcakes (without frosting) made that way from having been baked in a muffin tin.  The result was tons of thick cookie goodness with a crunchy outside and a softer, cookie dough center.  I knew I had to have the recipe.  When Will told us all it was simply the cookie recipe from a bag of Trader Joe’s chocolate chips, I could hardly believe it.  Genius.  Now, with my sheer lack of baking sheets, these cookies might be happening more and more frequently.  With as tasty as these are, as long as I pawn most of them off on my friends, I’m not sure that’s such a bad thing.

Cupcookies (lightly adapted from a Trader Joe's chocolate chip bag)

Yield: About 12 to 18 cupcookies

Ingredients:
2 ¼ cups all purpose flour
1 tsp salt
1 tsp baking soda
1 cup brown sugar, firmly packed
1 cup granulated sugar
1 cup butter, softened
1 tsp vanilla extract
2 eggs
12 oz of chococolate chips
1 cup chopped nuts (optional)

Directions: 
1) Preheat oven to 375ºF and grease each well of the cupcake tin.
2) Combine flour, salt and baking soda in small bowl, set aside.
3) Combine butter, both sugars, and vanilla and beat until creamy.
4) Add eggs and mix well
5) Then add dry ingredients and mix well
6) Add chocolate chops and chopped nuts and stir until evenly distributed throughout dough.
7) Fill each cupcake well about half full with cookie dough or more (depending on how thick you want your cupcookies).
8) Bake for 12-18 minutes until tops of cupcookies are golden brown.
